    1. 1

      Scout the Fleet

      Morning:Arrive; first stop is a local tackle shop (Half Hitch is the institution) for intel, rigs, and licenses.

      Shopping:La cremeria - Gelato/ Ice Cream & coffee shop in Baytown wharf Destin

      Afternoon:Walk the Destin Harbor Boardwalk between 3:30 and 5 pm when the charter fleet unloads. See which boats are hanging the fish you want, then talk to the deckhands. This is how locals pick a charter.

      Fishing charter:Reel ‘Em In Fresh Seafood and Gourmet of Seacrest located in Peddler's Pavilion on 30A

      Evening:Gumbo at Hurricane Oyster Bar & Grill, then an early night. You have a boat to catch.

      Dinner:Shrimp Basket

      Insider Tip:Charters and party boats cover your fishing license. Fishing from shore or the surf requires your own saltwater license (non-residents included), so grab it online or at the tackle shop.

      Party Boat Warm-Up

      Morning:A half-day trip on the Destiny or Destin Princess. The big party boats are cheap per angler, gear is included, and deckhands handle the ugly parts.

      Fishing charter:Stinky's Bait Shack

      Afternoon:Hand your catch to Harbor Docks, and they'll cook it for dinner.

      Shopping:Lids

      Evening:Eat your fish three ways. Nothing on any menu beats it.

      Dinner:Bayou Bill's Crab House

      Insider Tip:Stand near the stern on party boats and befriend the deckhand early. Tips flow both directions.

      The Big Offshore Day

      Morning:A private or six-pack offshore charter (6-8 hours): snapper, grouper, king mackerel, maybe a mahi run. Book this months ahead if you want a specific captain, and check current snapper season dates because they shift annually.

      Fishing charter:Angler's Beachside Grill

      Afternoon:Deep water, big fish, sore arms.

      Lunch:Crab Trap Destin

      Evening:Dockside beers, photos, bragging. Dinner at Dewey Destin's, fried fish done by the family the town is named after.

      Insider Tip:Weather cancellations happen, so schedule the big charter early in the trip and keep a backup day.

      Inshore & Pier Day

      Morning:An inshore bay charter: redfish, speckled trout, and flounder on calm water. A completely different game than offshore.

      Fishing charter:Destin Inshore Charters

      Afternoon:The Okaloosa Island Pier: a small walk-on fee, rod rentals available, and the pier regulars are a free masterclass.

      Drinks & nightlife:Local Catch Bar & Grill

      Evening:Oysters and a harbor sunset at AJ's.

      Insider Tip:Calm bay water makes inshore the play if anyone in your crew fed the fish on Day 3.

      Surf & Send-Off

      Morning:Dawn surf fishing on the Gulf side, where pompano and whiting run the troughs. License required (see Day 1).
